Recipe for Rainbow Mango Salad

Do the words "vegetables" and "fruits" sometimes feel like a culinary punishment? Is the idea of swapping your favorite comfort food for a bowl of leaves less than appealing? You're not alone. Many believe that healthy eating means a flavorless existence. But what if that wasn't the truth? What if a salad could be exciting, satisfying, and even crave able? Prepare to have your assumptions gloriously overturned.

Preparation:

Serving - 2 People

Prep Time - 10 minutes

Cooking - No cooking required


Ingredients:

  • 1 Mango - not too ripe - peeled, pit removed & cubed (In South Africa we use what we call as fish mango)

  • 1/4 of onion, finely chopped

  • 1/2 cup cherry tomatoes, halved

  • 1/2 of cucumber, chopped to small cubes

  • 1/2 green bell pepper, deseeded and sliced (optional - can add red and yellow bell pepper if you want)


Seasoning spices:

  • 1/3 teaspoon salt

  • 1/4 teaspoon cayenne pepper

  • 1/4 of key lime, juiced


Directions:

  1. Take a medium bowl, place the mango pieces in it, add cherry tomatoes, onions, cucumber, belle peppers and then drizzle with lime juice.

  2. Season with salt and cayenne pepper, toss until combines and then let it rest in a refrigerator for 20 minutes. This will ensure that the different flavors blend together.

  3. After 20 minutes, serve straight away.
