Ultimate Green detox salad to revitalize your body

Part of the biggest reason I decided to follow a plant-based diet was mainly due to my health. I was obese, with chronic back pain and everything felt hard to do. My doctor recommended I start with my diet first, and key here was to eat the correct portions, drink my water and mind my business. I did all of that but still felt unhealthy, until I came across the alkaline diet (my experience, everyone is different). Loved being in the diet so much, that I am now blogging about it. Everything I try and makes an impression, I want to shout and share with all my friends and family. And this is what this salad does for me, I love raw eating, and this salad is tasty. I always gets asked, if being vegetarian is any fun since all the delicious foods I don't eat. Tell them, come live with me for a couple of days and eat the delicious vegetarian food that are organic and very healthy, you would be blown away.


Anyway, back to the salad. I normally use the salad as the base for other meals or as a side, but I totally do eat it alone also. Depends on the mood I am in that day, main ingredients on the salad cucumber and arugula (known as wild rocket). Cucumber is great fro detoxing the body, plus it also hydrates it among it many other benefits. Arugula has many antioxidants, it is said to some cancers, great purifier of the body. And that is why this salad is the best.


As a South African, for the best and fresh arugula you can go to Woolworth, that is where I normally buy mine.

Preparation time: 5 minutes; Cooking time: 0 minutes;

Nutritional Info: 142 Cal; 12.5 g Fats; 1.6 g Protein; 7.8 g Carb; 1 g Fiber;


Ingredients

½ of cucumber, de-seeded

4 ounces arugula

1/8 teaspoon salt

1 tablespoon key lime juice


Extra:

1/8 teaspoon cayenne pepper


Directions

1. Cut the cucumber into slices, add to a salad bowl and then add arugula in it.

2. Mix together lime juice and oil until combined, pour over the salad, and then season

with salt and cayenne pepper.

3. Toss until mixed and then serve.
